VELLUTATA di ZUCCA

INGREDIENTS:

Red Pumpkin

Vegetable broth

Salt and pepper,

onion

potatoes,

 olive oil Exta virgin

ginger

After cleaning the skin of the pumpkin and removed the seeds  and done the same thing for potatoes.

Cut the potatoes and the pumpkin into small pieces, and even the onion

In a saucepan, add some olive oil, when is  heated add the onion, let fry on low heat so that it does not burn,

when becomes soft, add the pumpkin and potatoes.

Mix everything and let them let fry for a few minutes with the onion,

now you can add the vegetable broth and let  cook over low heat for about 20 minutes,

now add some ginger (if you really like the ginger, add a bit more otherwise just a bit for the tasty, because it has a strong flavor.)

 

 

After you cook the ginger for a couple of minutes,

you will blend everything with a mixer.

You can see that you will obtain a thick cream, taste it and add some salt and pepper to taste.

I put some extra parmesan cheese  and is very delicious
